As a teenager, Anderson played in the Canadian major junior hockey system in Guelph, Ontario. He was drafted by the Calgary Flames in 1999, but they did not sign him to a contract. He reentered the draft in 2001 and was selected by the Chicago Blackhawks.

He reported to the Blackhawks minor league affiliate in Norfolk, Virginia, where he played parts of four seasons. He made his NHL debut in November 2002. In the summer of 2006, he was traded to the Florida Panthers.

Craig played his final minor league season in 2006-07 in Rochester, New York. He has been in the NHL full-time since the 2007-08 season. In the summer of 2009, he became a free agent and signed with the Colorado Avalanche.

In February 2011, Anderson was traded to the Ottawa Senators. His game improved in the Canadian capital, as he led the NHL in save percentage and goals against average in the lockout-shortened 2012-13 season. He is currently under contract with Ottawa through the 2017-18 season.
