Last year’s winner of Breakthrough Restaurant Award, has, well, broke through. Another Frenchman who has an egalitarian approach, Inaki Aizpitarte champions ‘bistronomy”, creative, modern, and crucially, affordable haute cuisine. When a dish on his menu is not financially viable, he would rather reduce the portion than get rid of it, just so people can try it.
