In a two-hundred-year old adobe building that was a stage stop on the Butterfield Trail, La Posta is one of the grand old Mexican-American restaurants of the Southwest. Opened in 1939 by Katie Griggs, and now run by her descendants, it is a sprawling, multi-room place that is an essential stop for anyone in search of authentic regional food.
